I know factories make just about everything these days but are the any products an average person can work on to create and then sell through an online auction site? Thanks!

Dog treats packaged attractively in pint mason jars wrapped in colorful printed swaths of fabric and tied off with a bow and instructions included in the box of 12 jars for how to hand sew a doggie quilt out of the fabric pieces. Customers will re-order for more pieces. Include in each 12-jar box a folksy newsletter.
2. Homemade (molds are available at Walmart / Michael's / Internet) chocolate candies for specialty markets including weddings and gift boxes for corporate gifts, packaged in neutral pine wood boxes sold on container websites.
3. A website for art created by children for sale at a commission. There is a huge high figure market for children's art.
4. Brokering tutors on the phone and Internet. Form a clearinghouse in your community of educators who want to tutor (they do) for $35 - $45 per hour. They keep half. Advertise at all the community schools and colleges. I know someone who got seriously rich doing this in one year.

If you can teach yourself a handicraft that's been pretty much replaced with mass production, you will be able to create one-of-a-kind artisan products, whether it's home-made bread or wooden-inlaid boxes. Some of these are marketable.
Ideally, you want something worth the time it takes you that people find affordable.
Without knowing your skills, interests, and what equipment you might own, I can't guess what might work for you. I know a woman who tie-dyes lingerie for online sale, one who makes ID badge lanyards from beads she makes herself, and a musical instrument maker.
You won't make money from building anything from a kit. Other people can buy kits. You want to create something from the ground up, so to speak.

Here you go, various wrist straps and arm bands for people who workout, run, or walk to carry things in. For example, suppose I want to carry my car key or house key, or some money or a credit card, while exercising, and I don't want to put stuff in my pockets. I want to insert them in wrist or arm bands, but I've never found a commercial product that does this well. Look for the deficiencies in what's on the market.

go to eBay and do a search for "handmade" and see all the ideas that pop up. Take particular note of which items are selling well - with an obvious demand.
